Food-grade glycine is a sweet amino acid with a sweetness of about 0.8 times that of sucrose. It has a soft sweetness different from sugar. It is used as a flavoring agent in soft drinks and alcoholic beverages; it is used as a sweetener alone in candies and biscuits.
When food-grade glycine is used in combination with low-grade fatty acid glycerides, it has a significant inhibitory effect on microorganisms that cause tofu spoilage (such as Bacillus subtilis, Pseudomonas, Escherichia coli, Lactobacillus, etc.). Therefore, the currently used tofu preservatives are mainly glyceride preparations containing food-grade glycine and lower fatty acids.
The main uses of food grade glycine are as follows:
(1) Used as a flavoring agent and sweetener in alcoholic beverages; used as a sourness corrector when synthesizing sake and refined beverages, and used as an additive when pickling pickles, sweet sauces, soy sauce, vinegar and fruit juices to improve food Flavor, maintain original flavor, provide sweetness source, etc.
(2) Used as a preservative for surimi products, peanut butter, etc., it can inhibit the reproduction of Bacillus subtilis and Escherichia coli.
(3) Utilize its own amino and carboxyl groups to buffer the taste of salt and vinegar.
(4) Formulas for food brewing, meat processing and refreshing drinks, and debittering agent for sodium saccharin.
(5) Used as a stabilizer for cream, cheese, artificial milk, instant noodles, wheat flour and lard.
(6) Used to stabilize vitamin C in food processing.
(7) 10% of MSG is glycine.
(8) It can be used as an antiseptic and has an important antiseptic effect.
